Fermented Black Beans

After 3 days of incubation spores of both¬†Aspergillus Oryzae and Rhizopus Oryzae grow on black soy beans. The fermented beans will be brined and used in that staple of Cantonese cooking “something with black bean sauce”. After 4 days the mycelium had doubled. Both appearance and smell of the beans indicated it was time for the brine. The taste however was pleasant.

Update: After 3 months in a 20% brine solution these beans ht the trashcan. Note to self: control the environment
