After 3 days of incubation spores of both Aspergillus Oryzae and Rhizopus Oryzae grow on black soy beans. The fermented beans will be brined and used in that staple of Cantonese cooking “something with black bean sauce”. After 4 days the mycelium had doubled. Both appearance and smell of the beans indicated it was time for the brine. The taste however was pleasant.
Update: After 3 months in a 20% brine solution these beans ht the trashcan. Note to self: control the environment
